  7. Hi - OK, for all of you who sent me mail asking for the recipe for
  8. Mama's Quiche, here it is: (Sorry it took me so long, but the recipe
  9. was in St. Louis, and I was in Urbana, IL)

  11. 1 egg                8 oz. crab meat
  12. 4t flour            1 T finely chopped green onion
  13. 1/2 C mayonnaise        9-inch pie shell (pre-baked)
  14. 1/2 C milk            8 oz. Gruyere or other cheese
  15.  
  16. Beat egg with a whisk;  blend in flour;  blend in mayonnaise and milk.
  17. Fold in cheese, crab and onion.  Fill shell.  Bake 45 minutes at 350.

  19. NOTE - I mentioned this recipe in a response to what to do with
  20. fiddleheads, because you can substitute whatever filling you want, just
  21. keeping the egg, mayo, flour and milk the same.
